Look closely at our wall and you'll find three flags burned into the timber — Texas, Jamaica and Portugal. They're the three fire traditions we cook by, and the reason there's nowhere else in Bali quite like Nico's.

Brisket goes on the smoker before sunrise and comes off 14+ hours later with a black, peppery bark. Jerk chicken is charred over open flame the Kingston way. Peri peri birds are basted and grilled until the skin blisters. Three cuisines, one kitchen — and every one of them cooked with real fire.
